Cheesy Creamy Nachos Bake

This is one of my favorite food especially my hubby. I tried to look for a new twist of nachos and luckily I found one. For everyone to know : Nachos are a Norteño dish from El Norte that consists of heated tortilla chips or totopos covered with melted cheese, often served as a snack or appetizer. Here are the ingredients and steps how to make it.

INGREDIENTS:

500 grams Beef or Pork, ground

1 onion, medium size, chopped

5 cloves of garlic, chopped

1 tsp. salt

1 tbsp pepper, ground

For the Sauce:

1 big can evaporated milk (375 ml)

1/2 box of cheese (365 grams)

1 tetra pack (250ml) all purpose cream

2 tbsp butter

1 sachet (65g) Cheeze whiz savers pack, for a cheesier taste

1 tsp salt

2 tbsp cornstarch & 1/4 cup cold water

Additional Ingredients:

4 big tomatoes, chopped

2 bell pepper, chopped ( green and red)

1/2 box of cheese (shredded)

1 white onion, medium, chopped

cheese, shredded

STEPS:

In a hot pan, sauté onion and garlic then add the ground pork or beef. Add the salt and pepper to taste. Let it simmer until water dissolves. Once the water dissolved, put it on a bowl and set it aside.

In a hot saucepan, pour the evaporated milk until it boils. Add the all purpose cream, butter and Cheez whiz savers pack and let it melt. Then add the cornstarch mixture and stir it gently so that the mixture won’t be thicken. Once done, set it aside.

In an aluminum pan, put the half of the ground pork then pour sauce. Then assemble tomatoes, bell peppers and onions. Pour the sauce again and top it with ground pork then sauce and lastly for toppings the remaining bell peppers and the shredded cheese (I also added some mozzarella cheese) . Preheat the oven for 200 degrees and bake for 20 minutes.

Serve it hot. with nacho chips.

Pichi – Pichi

PichiPichi is a kind of Filipino dessert or “kakanin” (goodies). It is made from grated cassava. It can be serve as a snack or dessert. It is easy to cook.

Ingredients:

3 cups cassava, grated

1 and 1/4 cup white sugar

1/2 tsp salt

1 pc. small coconut,grated

cheese, grated

1 cup water

STEPS:

Just mix the ingredients all together and drain the mixture for 3 times. Pour on molder then steam for 20 minutes. Serve it hot. ( You can also put food dye )

CARAMELIZED FISH SAUCE CHICKEN WINGS

Ingredients:

8 pieces chicken wings

4 pieces cloves garlic (minced)

1 tsp chili flakes

1 tsp honey

1 tsp brown sugar

2 tbsp fish sauce

ground black pepper

Steps:

Marinate the chicken wings with ground black pepper and 1 tsp of fish sauce for an hour.

Place a pan on the stove then pour some then fry the chicken until golden brown.Set aside.

In another pan, put some oil then saute garlic and chili flakes.

Pour the honey until simmer.

Put the 2 tbsp fish sauce and brown sugar and mix it together.

Toss the fried chicken in the caramelized glaze and mix until everything is coated.

Serve it hot.

Banana Cake

Ingredients:

4 pcs. ripe (Lacatan) bananas

1 1/2 cup bread flour

1/2 cup brown sugar

1 tsp. baking soda

1/2 cup oil ( I used vegetable oil )

1/2 tsp salt

2 whole eggs

Steps:

1. Mashed the bananas.

2. Mix with oil and eggs.

3. Add in the dry ingredients (flour, sugar, salt, and baking soda)

4. Put a small amount of oil in the molder.

5. Bake for 40 mins. in 180 degree Celsius or if you don’t have any oven you can steam in rice cooker for 45 minutes.

Pork Callos

Hello everyone. I am back and today I was inspired to this budget friendly dish from Spain.A lot of people know that there were a lot of things that were influenced by Spanish people to the Filipinos and one of this, is the food that I cooked. For everyone to know, Callos is a stew common across Spain, and is considered traditional to Madrid. In Madrid, it is referred to as callos a la madrileña. It contains beef tripe and chickpeas , blood sausage and bell peppers. Chorizo sausage may also be used. Since, this is a budget friendly dish I tried to change some the ingredients. ( But I promise I will try the original next time ). Instead of beef tripe and blood sausage, I had pork,pork liver and Hungarian sausage.

Ingredients:

500 grams pork chop
pork liver
Hungarian sausages
1 large potato
2 of each green and red bell pepper
garlic
1 large onion
3/4 cups chickpeas (garbanzos)
500 grams tomato sauce
liver spread
dried bay leaves
paprika powder

Steps:

Boil the pork chop and liver then add pepper corn and dried bay leaves and leave it for 10-20 minutes.

Heat the oil in the pan, saute garlic and onion.

Add the potato and saute for 2 -3 minutes.

add in sausages and bell pepper

Add in the half portion of pork and liver and let it sit there for another minute.

add the chickpeas and the rest portion of the pork and liver.

add tomato sauce.mix it together and pour the pork broth. let it simmer for about 3-5 minutes.

add paprika.season with granules and pepper.check the taste, adjust as needed.

To bind the taste of the ingredients add liver spread.

Serve it hot in a bowl.

Easy Carbonara Recipe

Hello everyone. It’s been a long time that I haven’t written in here. I already prepared a lot of recipes and some of it I tried but I feel sorry because I was lay to write and quite busy at the same time. This is my first time making this dish. This is just so easy.

Ingredients:

500 grams penne pasta
250ml all purpose cream
410ml evaporated milk
200grams mushrooms in can
1 cup spiced ham,diced
white onions,diced
butter
seasoning granules
black pepper

STEPS:

Get a cauldron and pour 3 cups of water. Put the pasta then add a little oil and salt. Let boil for 8-10 mins. Set aside.

In a pan, put the butter until it melts. saute, white onions.Cook for a minute over low heat.

Add the ham and cook it for a minute.

Pour the evaporated milk and stir it.

Add the all purpose cream and mushrooms.Mix it together to avoid the lumps from forming.

Let it simmer for 1-2 minutes then season with granules and pepper and put the pasta and mix it together.

Serve it hot.

No Bake Brownies

Hello,everyone. Happy New Year and Welcome 2020! How have you been so far? How’s your first day of the year? Today, this is my first time doing a proper dessert. Since I am not good a baking, I tried and do a no bake dessert. I really love brownies ( and I guess you,too) and now I here is my recipe.

Ingredients

2 cups all purpose flour
1 cup unsweetened cocoa powder
1 tbsp instant coffee
1 tsp salt
2 cups evaporated milk
1 cup sugar
1/2 cup butter, unsalted

Ganache:

250 grams dark chocolate
2 tbsp butter
1/8 cup fresh milk
peanuts
chocolate chips
sprinkles

Steps:

In a bowl,Sift the flour and cocoa powder. Once done, add the coffee,salt and whisk it together. Heat up a deep pan and pour the evaporated milk and stir.Add the butter then add sugar and stir until melted. Now, add the mixture of flour and cocoa powder.Just mix until i can already hold a shape. Transfer the mixture in a container with wax paper.Spread it evenly into the container. Flatten using a spoon or spatula.

In making a ganache, I use an improvised boiler. Melt the dark chocolate then add the butter and the fresh milk over low heat. Stir until the chocolate is completely melted.Pour chocolate ganache on top of brownies. Spread it evenly. Sprinkle some chopped peanuts, chocolate chip and sprinkles.Cover and chill in the ref overnight. After it chilled cut brownies into bite size pieces.

Home Made All Meat and Cheese Pizza

Hello, everyone. It’s me again. Today, I have a new recipe for you guys. I’ve been waiting for this time to make it. Since I have a 5 day vacation why not make it. In here, I use our oven toaster for making it instead of the nonstick pan. Below are the ingredients and steps:

PIZZA DOUGH

2 cups all purpose-flour
1 tbsp. oil (vegetable oil)
1 tbsp baking powder
1/2 cup water
3/4 cups sugar
1/2 tsp. instant dry yeast
pinch of salt

TOPPINGS:
ham
hotdog
Pizza sauce (or tomato sauce)
mozzarella cheese
pepperoni

Steps:

Mix all the dry ingredients ( all purpose flour, baking powder,sugar ,yeast and salt) with a whisk or you can use a spoon.

Then add the oil and mix it again.

Add the water and knead without any lumps.

In a bowl, put the dough and cover it with cling wrap, get a toothpick and put some holes so the dough can breath.

Set aside for 30 minutes -1 hour to double it up.

Cut to desired size. Shape Dough into balls.

Roll out the dough into thin crust and prick it with a fork.

In a pan, pour some oil then fry the dough in a low heat for 3 minutes.

Add the tomato sauce, grated cheese, ham, pepperoni, hotdog and mozzarella(optional).

Put it in the oven toaster ofr 2-3 minutes or until the cheese melts.

Chicken Binakol (Chicken Cooked In Buko Juice With Coconut Meat)

Hello everyone, I have a new recipe for you guys. It’s my Aunt’s favorite chicken dish. This is a very,very simple and easy to cook dish.She taught me how to cooked it and now I will share it to you.

For everyone to know, this is a chicken soup dish that resembles *tinola*, except that this is cooked using coconut juice. I bought young coconut water along with the coconut meat.

Ingredients:

500 grams Chicken
Lemongrass
Ginger, cut into strips
4 cloves Garlic, chopped
1 medium Onion, sliced
2 tsp Salt or Seasoning granules
1 Chicken broth cubes
1 whole Coconut meat
1 and 1/2 cup Coconut juice

Steps:

In a casserole, heat up some oil and saute onion and garlic then add the ginger.

Add the chicken and stir it.Let it simmer for 10 minutes or until the excess oil from the chicken.

Add the coconut juice and the lemon grass.Let it boil for 20 minutes.

And lastly,add the coconut meat and simmer it for 5 minutes.

Serve it hot.

Pork Empanada

Hello Mamsh! I hope you are having a great day. Today, I have a new recipe for everyone. I guess not everyone knows about this food. Below is an information about it.

An empanada is a type of baked or fried turnover consisting of pastry and filling, common in Latin American and Filipino cultures. The name comes from the Spanish verb empanar, and literally translates as “enbreaded“, that is, wrapped or coated in bread.

Here are the ingredients:

For Empanada Dough:

2 cups all purpose flour
2 tbsp sugar
1 tbsp baking powder
a pinch of fine salt
butter, cold and solid
1/3 cup of cold water

For the filling:

1/2 kilo ground pork
1 medium size carrots,diced
1 medium size potato,diced
green peas
raisins
1 medium size onion,chopped
3 gloves garlic,minced
1 tbsp oyster sauce
chicken cubes

For the dough:

Mix all the dry ingredients in a mixing bowl starting with the flour, sugar, baking powder, and a pinch of salt. Mix well using a whisk or fork .Cut the butter into small pieces and add in the mixing bowl together with the other ingredients.Add water gradually and mix it thoroughly until a dough is formed.Divide the dough into pieces.If u have a rolling pin,flatten and try to make it like a round shape.

Filling:

In a pan, put some oil and once heated saute onion and garlic until golden brown. Add the ground pork or chicken.Mix together and then add the carrot after a few minutes add the potatoes and let it simmer. Add in oyster sauce,add the raisins and stir.Once the filling is cooked, let it cool and set aside.

Steps:

Arrange and use a spoon to put the filling in the dough. fold the dough then press the edges or you can use a mold press.In the deep pan, heat up some oil and deep fry the empanada. Then once it is golden brown strain it.Then plate it.
