Hello everyone. I am back and today I was inspired to this budget friendly dish from Spain.A lot of people know that there were a lot of things that were influenced by Spanish people to the Filipinos and one of this, is the food that I cooked. For everyone to know, Callos is a stew common across Spain, and is considered traditional to Madrid. In Madrid, it is referred to as callos a la madrileña. It contains beef tripe and chickpeas , blood sausage and bell peppers. Chorizo sausage may also be used. Since, this is a budget friendly dish I tried to change some the ingredients. ( But I promise I will try the original next time ). Instead of beef tripe and blood sausage, I had pork,pork liver and Hungarian sausage.
Ingredients:
500 grams pork chop
pork liver
Hungarian sausages
1 large potato
2 of each green and red bell pepper
garlic
1 large onion
3/4 cups chickpeas (garbanzos)
500 grams tomato sauce
liver spread
dried bay leaves
paprika powder
Steps:
Boil the pork chop and liver then add pepper corn and dried bay leaves and leave it for 10-20 minutes.
Heat the oil in the pan, saute garlic and onion.
Add the potato and saute for 2 -3 minutes.
add in sausages and bell pepper
Add in the half portion of pork and liver and let it sit there for another minute.
add the chickpeas and the rest portion of the pork and liver.
add tomato sauce.mix it together and pour the pork broth. let it simmer for about 3-5 minutes.
add paprika.season with granules and pepper.check the taste, adjust as needed.

To bind the taste of the ingredients add liver spread.

Serve it hot in a bowl.
